What I Eat In Portugal {Vegan} #3

Hi, thank you so much for being here and reading my post. I appreciate that lately I haven’t been very active here so thank you very much for sticking with me. More will come soon. Today I am sharing with you what I eat in a day, Portugal edition. You might know that although I live in England, I am actually Portuguese and a lot of my family actually lives in Portugal. I try to visit at least twice a year and I absolutely love it here! Even though I visit quite often (considering), I am always amazed by my country’s beauty and its amazing food and culture! Breakfast Fruit is my absolute favourite thing to have for breakfast, specially in Portugal where fruit is so delicious and cheap. Here I have half a mango, one banana and one kiwi. I also had one piece of wholegrain bread with massed avocado. I am amazed at the size of the avocados here! They are so beautiful and creamy! And of course, a classic portuguese espresso. You …

What I Ate Today #5 {Vegan at Uni}

I am so excited to finally be doing another ‘What I Ate Today’ post! Thank you for being here. I love sharing with you a bit more of my life and what I do with my days, plus I hope this is helpful to some of you to get some food inspo or new recipes. 7.30am – Morning Snack Woke up at about 6.30am, which is quite early for me. Had a slow morning, did some work on my laptop whilst drinking a cup of Chai tea – I needed a bit of comforting caffeine – and one large and very spotty banana. Only had a little bit to eat as I wanted to go to the gym shortly after and I can not workout with a full stomach. 11am – Breakfast At the gym I did a circuit workout, quite high intensity but really fun. Things I’ve been challenging myself with include lots of burpees and both normal and tricep push ups. After a quick shower and had a big bowl of porridge! I suppose I could call this …

What I Eat In Portugal {Vegan} #2

I love food, we all know that by now, however, when I am in Portugal I love food eeeeven more! Why? The wonderful fresh fruit and veg! The delicious bread and jam! The olives and most importantly…the coffee. Breakfast – a bit of an unusual breakfast, I usually have porridge, but this morning I had some fruit as I wanted something fresh and hydrating. Also had a big cup of tea to feel cozy. Lunch – had a lovely lunch with my family at a very traditional Portuguese restaurant by the beach. To start with we had the classic bread, cheese and olives. Obviously I skipped the cheese and had some slices of bread and olives (so good!). As a main I had a veggie mix, loads of broccoli, mushrooms, tomato and even pineapple. I had that with a side salad. Very yuummy! Snack – cheeky afternoon snack is a massive fruit platter. One mango, one pear, one banana, one persimmon and half a melon. Whenever I am in Portugal (and as you can tell by this post) …

What I Eat At Uni {Vegan}

Hello beauties babes! I am really excited to be writing today, thank you for checking out the blog. It has been a while since I have shared with you guys what I have been eating and since coming to University it has definitely been interesting to see how my diet, but specially my cooking, have evolved. Breakfast 10:00am – The classic porridge. I had about a cup of oats with almond milk and 1 banana. For toppings I had (and always have) poppy seeds, pumpkin seeds and sunflower seeds. Also added a teaspoon of peanut butter on top which literally changes everything, if you haven’t had peanut butter on your porridge, please try it! Lunch 1:30 pm – After a few hours of lectures I came back home and had an amazing toastie for lunch. Two pieces of wholegrain bread with vegetable tomato sauce, kale and mushrooms. I had that with ketchup on the side. Soooo yummy! I love toasties and this has become a new favourite. Lunch 2.0 2:30pm – Just before I headed out for more …

What I Ate In Morocco {Vegan}

As a very passionate vegan and food lover, I was very excited to go to Morocco to find out what it would be like to be vegan in a completely different culture compared to Europe. Overall, it was quite easy specially because we had breakfast and dinner at the hotel and they always had a vegetarian option. Breakfast Breakfast always started with a massive pile of amazing watermelon. This was honestly the best watermelon I have ever had! Morocco has the biggest watermelons I have ever seen in my life – I’m obsessed. I also always had bread, lots of, with jam (fig and strawberry jam) and honey. Occasionally they would make some traditional pancakes that happened to be vegan and really delicious. Another breakfast essential, their traditional mint tea which was gorgeous. Lunch I didn’t usually have morning snacks cause I ate so much for breakfast. For lunch we would either eat out in a restaurant or eat food we bought in the markets. There weren’t any shops in Morocco (like Tescos, M&S, etc.), we could …

What I Ate Today In Portugal {Vegan}

I am currently in Portugal visiting my family, friends and enjoying the sunshine. When I first came to Portugal being vegan it was quite hard for me to adapt my diet to the Portuguese “lifestyle”. Even though there is an abundance of delicious fresh fruit in Portugal, my family was not used to cooking vegan food which was very tricky in our daily family lunch and dinner. Nowadays it is a lot easier but I do understand when people say veganism can be hard in some situations, however, there is always a way to do it. Onto what I ate today… Breakfast This is a typical breakfast for me here in Portugal. I blended 2 frozen bananas, 2 handfuls of frozen berries – including raspberries, blueberries and blackberries – and a bit of soya milk. I love this breakfast! It is delicious, vibrant and it gives me loads of energy. However I most admit, not the most attractive picture but definitely try it. Coffee Break Coffee lovers you have to come to Portugal and have an espresso, it is heaven. I …

I love having breakfast and it is something I look forward to every day. I wanted to make sure I started my day with the best food possible and for me that is FRUIT, lots of fruit. I had one melon – I have been saving that melon for my birthday – and a delicious smoothie. The smoothie had: 2 bananas, 1 handful of raspberries, 1 handful of blackberries and some unsweetened almond milk. It was so delicious and it was the perfect way to start off my day! Brunch Brunches are perfect for those who love to have breakfast for lunch. As you can probably guess, I love going out for brunch. Having breakfast food twice in one day is such a treat for me hahah! I went out to lovely local cafe and …

Greetings! ✵ It has been a while since I have done a “what I eat in a day” post, and you know how much I love sharing and talking about food so I am really happy to be doing another one of these. Today was a school day for me, I started at 11.15 am and finished at 4.30 pm. Here is what I ate today: 8.50 am – Breakfast: As per usual, I had to have a bowl of porridge. This was just a simple porridge with banana and I topped it with more banana and some mixed seeds. I also had a cup of delicious Earl Grey tea. You can check out the porridge recipe here, the only difference is that I swapped the peanut butter for mixed seeds. Porridge and tea is literally my ideal breakfast, is like a perfect morning treat. 9.40 am – Vitamins: Time to take my vitamins, here I am taking two Flaxseed capsules which are really good sources of Omegas and one general vitamin, it’s an organic vitamin full …

What I Ate Today {Vegan} #1

People are constantly asking me what I eat. Most people think because I decided to have a vegan diet I can only eat salad. So I decided to make this post, this is what I eat in a regular school day. 9.00am – Breakfast: Banana and peanut butter porridge! One of my favourite breakfasts ever. I have a blog post dedicated to this amazing recipe that you can check out here:  recipe. The only difference is that today I decided to add some seeds on top for extra crunch (poppy, pumpkin and sunflower seeds). I also had some Jasmine tea…my new obsession. 9.45am – Coffee Break: simple black coffee because I looove coffee, specially in the morning when I am relaxing. I don’t necessarily use it to wake me up as I don’t think caffeine does anything for me, I just love the taste of coffee. 1.20pm – Lunch: Today I had a tostie with spinach, kidney beans, sweet corn and onion, it was delicious! On the side I just had beans, spinach, sweet corn and …
