What I Eat In Portugal {Vegan} #3

Hi, thank you so much for being here and reading my post. I appreciate that lately I haven’t been very active here so thank you very much for sticking with me. More will come soon. Today I am sharing with you what I eat in a day, Portugal edition. You might know that although I live in England, I am actually Portuguese and a lot of my family actually lives in Portugal. I try to visit at least twice a year and I absolutely love it here! Even though I visit quite often (considering), I am always amazed by my country’s beauty and its amazing food and culture! Breakfast Fruit is my absolute favourite thing to have for breakfast, specially in Portugal where fruit is so delicious and cheap. Here I have half a mango, one banana and one kiwi. Big Vegan Food Shop

So the other day I basically had NO food. My cupboard included some bits of dried soya, half a kg. of rice and oats – bet I could still make quite a lot of that though. But I order a massive food shop which will last me a good long while. I thought it would be cool to share with you what I go. I have made a post like this before – Vegan Food Shop – but I think this type of post is so helpful, if you want to include more plant based foods in your diet (or even try to go vegan) and you don’t know what to buy, this is a great post to get some inspiration from. You don’t need to get overwhelmed by vegan recipes and try to buy all the ingredients for all the recipes. Focus on plant foods, carbs, beans, legumes, fruit, nuts and seeds…that is all you need and it will allow you to make a HUGE variety of recipes and delicious meals! Fruit! I didn’t get load …

What I Ate Today #5 {Vegan at Uni}

I am so excited to finally be doing another ‘What I Ate Today’ post! Thank you for being here. I love sharing with you a bit more of my life and what I do with my days, plus I hope this is helpful to some of you to get some food inspo or new recipes. 7.30am – Morning Snack Woke up at about 6.30am, which is quite early for me. Had a slow morning, did some work on my laptop whilst drinking a cup of Chai tea – I needed a bit of comforting caffeine – and one large and very spotty banana. Only had a little bit to eat as I wanted to go to the gym shortly after and I can not workout with a full stomach. 11am – Breakfast At the gym I did a circuit workout, quite high intensity but really fun. Vegan Chocolate & Hazelnut Smoothie Recipe

I never thought I could love a smoothie so much! Today I am sharing with you my favourite smoothie recipe which has easily become one of my raw breakfasts. I have shared it with a few people (non-vegan) and they all love it and get really surprised when I tell them it is completely raw and vegan. There is probably a similar recipe out on the internet, but until I find it, I will remain very proud of myself for creating this dreamy drink! It is super easy and quick to make and it tastes incredible…almost like nutella haha You will need: 1 small/medium frozen banana 2 pitted dates 4 hazelnuts (also good with almonds) 1/2 cup of raw fine oats 1 very full tsp of raw cocoa powder Blend everything together with about 1 1/2 cups of water, although you can adjust the amount of water depending on how thick you want your smoothie. Pro tip: after I blend all my ingredients the smoothie is quite runny, so I  leave it on the fridge for about 5-10 …

Nottingham’s Vegan Market #3

The first Saturday of each month is always an exciting day…it is vegan market day! That one day of the month when I get to eat incredibly delicious food that I would never be able to make. I strongly encourage you to find out your local market days and go! You eat delicious food, meet lovely people and support your local businesses and community. It’s a perfect combo. First thing I ate was a pot of Nori noodles with a soya based sauce, seaweed and loads of veggies, from shredded carrots to courgette and chickpeas. It was really creamy and had a very unique flavour, it almost tasted of actual sea food which I haven’t had in a very long time. Nottingham’s Vegan Market #2

The first Saturday of each month is vegan market day! It is a very exciting day for me as it means I get to eat all sorts of sweets and vegan goodies I don’t usually have. For some live updates on what I am up to and all the vegan yuumy food I eat, make sure my Instagram page @ines_castro88. I have to admit that this month’s market was not as good as previous ones, perhaps because my two favourite stalls weren’t there so I didn’t get to eat my beloved vegan cheesecake…However, I did try some other delicious food! First I had a sausage wrap with caramelized onions and chilli sauce. This was so good! I usually have vegan sausages at home but there is definitely something special about this wrap that makes it sooo much better than the tradition sausage roll. We found a lovely couple who had a stall filled with delicious Indian cosine, all vegan of course! We got two giant vegetable samosas and chickpeas curry. You really can’t tell by the picture …

Vegan Food Shop

Food shopping is one of my favourite things to do. I love having fresh fruit and veggies! I have been doing my own shopping since moving to Uni and to be completely honest, in the beginning I struggled to think of the things I needed, however, after a lot of weeks of practice, I now know my staple things and ‘must haves’ that I pretty much get every week. Today I thought I would share will you what this week’s grocery list looked like, hopefully it will give you some inspiration about what to buy to make yuumy vegan meals. Do keep in mind that there are things here that I don’t buy every week like tooth paste, onions, etc.  Also, I have some food in the house already  (like potatoes, frozen veg, etc), so I didn’t need to buy those “must have foods”. My Go To Vegan Breakfasts

Breakfast is my favourite meal of the day! I could have breakfast food all day. However, although I love breakfast food, I tend to have the same 2 things over and over again. They are delicious, easy to make, keep me full and give me loads of energy. It almost feels silly to share such straight forward and easy recipes but I need to share my love for this food. Hope you give them a try. Porridge The classic delicious, warming porridge. I have been perfecting my porridge for a long time but I finally found my favourite recipe. This milk is a game changer, I don’t buy it too often but it is the best non-diary milk ever! 1 cup of Jumbo oats – jumbo oats are my favourite. 1 cup of Alpro Fresh Almond Coconut milk. 1 banana (make sure is very spotty) Use any seeds you have as toppings. What I Eat In Portugal {Vegan} #2

I love food, we all know that by now, however, when I am in Portugal I love food eeeeven more! Why? The wonderful fresh fruit and veg! The delicious bread and jam! The olives and most importantly…the coffee. Breakfast – a bit of an unusual breakfast, I usually have porridge, but this morning I had some fruit as I wanted something fresh and hydrating. Also had a big cup of tea to feel cozy. Lunch – had a lovely lunch with my family at a very traditional Portuguese restaurant by the beach. To start with we had the classic bread, cheese and olives. Obviously I skipped the cheese and had some slices of bread and olives (so good!). As a main I had a veggie mix, loads of broccoli, mushrooms, tomato and even pineapple. I had that with a side salad. Very yuummy! Snack – cheeky afternoon snack is a massive fruit platter. One mango, one pear, one banana, one persimmon and half a melon. Nottingham’s Vegan Market

In Nottingham there is a lovely monthly vegan market that I have come to love and adore! It is always on the first Saturday of each month and it is such a great thing to do outdoors, it has a great atmosphere and lots and lots of yummy food and amazing people. If you follow me on Instagram @ines_castro88, you would have seen a couple of pictures from last month’s market which included cheesecake, a jackfruit burger and a delicious crepe with chocolate sauce and fresh fruit. This month I thought I would share on the blog a few things we ate. I didn’t manage to take a picture of everything as I got too excited with the food and forgot to take pictures hehe classic me. After having two sausage rolls between us whilst wandering around the market, we sat down with all the food we collected, and the feast began.
