Hello beauties babes! I am really excited to be writing today, thank you for checking out the blog. It has been a while since I have shared with you guys what I have been eating and since coming to University it has definitely been interesting to see how my diet, but specially my cooking, have evolved.
10:00am – The classic porridge. I had about a cup of oats with almond milk and 1 banana. For toppings I had (and always have) poppy seeds, pumpkin seeds and sunflower seeds. Also added a teaspoon of peanut butter on top which literally changes everything, if you haven’t had peanut butter on your porridge, please try it!
1:30 pm – After a few hours of lectures I came back home and had an amazing toastie for lunch. Two pieces of wholegrain bread with vegetable tomato sauce, kale and mushrooms. I had that with ketchup on the side. Soooo yummy! I love toasties and this has become a new favourite.
2:30pm – Just before I headed out for more lectures I decided to have a second little lunch. I had a pita bread with humus and one sweet potato. I love to add sweet potato to wraps or pita bread, it makes everything sweet and delicious.
6:00pm – As I had to rush from a lecture to a yoga class, I took a container with some nuts and dates with me and snacked on them on my way to the gym. Had about 4 dates and a handful of mixed nuts and raisins. Random info – cashews are my favourite nut!
7:30pm – I got home at about 7pm and went straight into the kitchen to start dinner! The recipe is as it follows: half an onion, garlic, cannellini beans, half of green pepper, handful of broccoli, peans, sweet corn and kale. I added some waster with a vegetable stock and let it cook. In terms of spices, I added – salt, pepper, chilli powder and turmeric. On the side I was also cooking half a cup of basmati white rice. Once the rice was done, I added it to the veg and let it cook until everything was nice and creamy. This was one of my favourite dinners at Uni so far! Lots of greens, it was creamy and simply delicious!
11:00pm – As the night when on I got a bit hungry and one of my favourite snacks is crumpets with peanut butter! I had one crumpet and went to sleep after that.
This is what I ate one day of the week, usually my meals change quite a bit except for breakfast, I tend to always have the same breakfast. In the future I will be sharing my very easy and quick (plus cheap) recipes that literally take no effort to make.
