One reason why I love being vegan is how easy it is to make yummy food in just a couple of minutes. Today I am sharing with you a quick lunch I made the other day after coming home back from the gym – therefore I was very hungry. It was so delicious and all the different colours of the veggies made me so happy.
You can do this quick lunch with just about anything you have in the fridge, but here is what I used. Butter beans (my favourite), a quarter of red onion, mushrooms (lots of!), baby spinach for some beautiful greens, bits of tomato, sweet corn and about two teaspoons of tomato puree.
Here is what I did…
- Start by adding the red onion on a medium heat. Then add the mushrooms and the tomato puree. Stir, stir, stir.
- Then add the tomato cubes and let everything cook for a few minutes.
- Set three, add the beans and sweet corn.
- Finally, add the baby spinach, stir everything and let everything cook for a couple of minutes.
When everything was nicely cooked I added some salt, pepper and thyme. Put your yummy food in one of your favourite bowls – because everything tastes better in a bowl – and voilà! To finish it off I toasted a bit of bread and had that with some red pepper hummus, delicious.
Definitely try this out. It only takes 15 minutes and it is so filling and good. Even if you don’t have all the exact ingredients just play with the recipe.
