Food, What I Eat In A Day

What I Ate Today In Portugal {Vegan}

I am currently in Portugal visiting my family, friends and enjoying the sunshine. When I first came to Portugal being vegan it was quite hard for me to adapt my diet to the Portuguese “lifestyle”. Even though there is an abundance of delicious fresh fruit in Portugal, my family was not used to cooking vegan food which was very tricky in our daily family lunch and dinner.

Nowadays it is a lot easier but I do understand when people say veganism can be hard in some situations, however, there is always a way to do it.

Onto what I ate today…

This is a typical breakfast for me here in Portugal. I blended 2 frozen bananas, 2 handfuls of frozen berries – including raspberries, blueberries and blackberries – and a bit of soya milk. I love this breakfast! It is delicious, vibrant and it gives me loads of energy. However I most admit, not the most attractive picture but definitely try it.

Coffee Break

Coffee lovers you have to come to Portugal and have an espresso, it is heaven. I have always loved coffee but I never realised how good coffee is in Portugal until I moved to England. Every time I come to Portugal I look forward to enjoying the amazing coffee.

Lunch time! I had a very easy yet super yummy lunch. White dice with a bunch of different veggies like carrots, mushrooms, chickpeas, green beans and courgette. On top I put a little bit of tomato sauce. I had two plates of this delicious rice. Rice is one of my favourite foods!

As a mid-afternoon snack I made of juice which was so good! I blended 2 peaches, 1 orange and some cold water. With that I had 2 pieces of whole grain bread with peanut butter. Peanut butter is always the best.

I absolutely love pasta. As you can tell by this post, I love lot of food which makes my meals always very exciting. For dinner I had pasta with mushrooms, spinach, carrots, courgettes and tomato sauce. Just like lunch, I had two big plates of food.

That is what I ate today! Hope this post gave you some inspiration if you are having trouble finding easy vegan recipes. All you need is veggies, fruit and carbs! Thank you for reading. Lots of love,

Ines x
