What I Ate Today {Vegan} #3

Greetings! ✵ It has been a while since I have done a “what I eat in a day” post, and you know how much I love sharing and talking about food so I am really happy to be doing another one of these.

Today was a school day for me, I started at 11.15 am and finished at 4.30 pm. Here is what I ate today:

8.50 am – Breakfast: As per usual, I had to have a bowl of porridge. This was just a simple porridge with banana and I topped it with more banana and some mixed seeds. I also had a cup of delicious Earl Grey tea. You can check out the porridge recipe here, the only difference is that I swapped the peanut butter for mixed seeds. Porridge and tea is literally my ideal breakfast, is like a perfect morning treat.

9.40 am – Vitamins: Time to take my vitamins, here I am taking two Flaxseed capsules which are really good sources of Omegas and one general vitamin, it’s an organic vitamin full of goodness to help boost my immune system as I was ill in the past week.

1.00 pm – Lunch: Okay, I know this looks awful, I didn’t even try to make it pretty. This is as real as it gets. I was really hungry and just couldn’t wait to dig into that pasta with aubergine and tomato sauce (left overs from dinner). It was really yummy, I love left overs, food always seems to taste better the next day! I also had an apple after just before I started training at 2pm.

4.30 pm – After Training Snack: I snacked on some strawberries and raspberries whilst getting ready after training. I wasn’t as hungry as usual today because pretty much all my athletics training was javelin, so I didn’t spend as much energy as I normally would.

6.00 pm – Snack: Second snack of the day happened when I got home. I had two pieces of wholegrain toast with peanut butter and one banana. Toast and banana are just a heavenly combination. I also had a hot coffee (decaf) because coffee is life and there’s nothing better after a long day than a big mug of coffee.

8.30 pm – Dinner: Dinner was delicious today! I had a big plate of white rice with curry. It was a chickpea, mushroom and kale sort of curry…it was just really delicious. I love when you can really feel the taste of coconut in a curry. Yuummmyyy!
