Banana & Peanut Butter Porridge

I love breakfasts! I love taking time during the morning to make myself a delicious treat to start off the day. Personally, I find it really important to take those 10 or 15 minutes in the morning to put some thought into what I am eating. Taking time to cook yuummyy food instead of just going for the quicker option.

Porridge is one of my favourite things to have for breakfast. And I love trying different toppings, flavors, textures,etc. Today I am going to share with you my new obsession. Banana and peanut butter porridge! This is so so so simple, super yummyy and it keeps me full for hours.

Ingredients:

1 Banana

1 cup of almond milk – Rude Health – Almond Drink (or any other milk)

1/2 cup of jumbo oats – Whole Foods Jumbo Oats (or regular oats)

1 teaspoon of peanut butter – Whole Earth Crunchy Organic Peanut Butter 

Let’s Cook!

First you want to put your banana in a pan (save a little bit so you can add it at the end as a topping) and mash it a little bit. Then add your milk, I personally love to use almond milk as it gives the porridge a nice creamy texture. I have been using (and loving!) Rude health almond drink which is linked in the ingredients in case you want to have a look, but you can obviously use your favourite type of milk.

Give it a gentle stir and add your oats, again I linked the ones I use in case you are interested. Jumbo oats are great if you want your porridge to be less ‘plane’, it adds a lovely texture and crunch. Stir everything together and wait a few minutes for it to cook. I usually let it cook for about 5 minutes but it varies a little bit everyday.

When you are happy with the texture, I like my porridge creamy but not dry, put it in a bowl and add your toppings. I usually put some slices of banana and then add my favourite peanut butter on top! I definitely always put a little bit more than just 1 teaspoon…i just can’t resist it! I use crunchy peanut butter but any nut butter would be delicious.
